Madras Style Creamy Tomato Lentil Soup w/Garlic Croutons


This is a dish that has two main products that you can buy from Costco. It is a 30-minute meal that will wow the troops. It is best served in a soup bowl. It already has 11 grams of protein per serving, but add some grilled chicken slices and you have a major league healthy meal. Skip the croutons if you are avoiding carbs, but you will be missing a taste treat! The recipe produces extra croutons; put them on the table and watch them dissappear. You can also buy the croutons at the store, but I encourage you to make your own. It is SO easy. Clearly, croutons is a “fusion” choice. The pure Indian choice would be naan or papadam.

Servings: 4-6

Time Required: 30 minutes

Ingredients:

  • 4 slices of bread
  • 1 Tbsp. garlic salt
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 10oz. packets Tasty Bite Organic Indian Madras Lentils (Costco)
  • 1 28 oz. can of Cento San Marzano Peeled Tomatoes (Costco)
  • 1/4 cup of heavy cream
  • 1 cup Jasmine rice
  • 1.5 cups of water
  • 1 tsp. Tumeric
  • 1Tbsp. Cumin
  • 1 Tbsp. Butter
  • 1tsp. salt

Procedure:

  1. Preheat the oven to 350 degress.
  2. Stack the bread and cut into 1/2 inch cubes, place in a mixing bowl and add the olive oil and garlic salt. Mix well and spread on a baking sheet.
  3. Bake the croutons for 15 minutes until cruncy.
  4. In a 3-qt. saucepan, mix the rice, water, Tumeric, Cumin, butter and salt. Bring to a boil on high heat, cover and reduce to low heat for exactly 15 minutes. Remove from heat and set aside for 5 minutes.
  5. Remove the lid on the rice, fluff and add the Tasty Bite lentil packets, stirring well.
  6. Add the Cento tomatoes, cut or crush the tomatoes and stir well.
  7. Add the heavy cream and stir well.
  8. Heat until nice and hot. Serve in soup bowls and top with croutons. Put extra croutons on the table.

This dish is a complete meal in itself, but you could add slices of grilled chicken to dress it up a little.
